.mushroom artichoke sandwich.

Amazing and healthy recipe from my friend Alisha via allrecipes.com She also adds some mayo on the bun after to comes out of the oven. (vegetarian)


Ingredients
  • 1 (12 inch) French baguette
  • 1 tablespoon olive oil
  • 12 ounces fresh mushrooms, sliced
  • 1 (14 ounce) can quartered artichoke hearts in water, drained
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons garlic and onion seasoning
  • salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Slice the baguette in half lengthwise, split open, and toast in the preheated oven until lightly browned, 7 to 9 minutes.
  3. Heat the olive oil in a skillet over medium heat, and cook and stir the mushrooms and artichoke hearts until the mushrooms have given up their liquid and have started to brown, about 10 minutes. Stir in the Parmesan cheese, garlic and onion seasoning, and salt and pepper, and cook and stir until the mixture has thickened, about 5 more minutes.
  4. Fill the toasted bread with the mushroom filling, close the sandwich, cut in two, and serve.





.sweet potato fries.

These are my ABSOLUTE favorite! Bought from Trader Joe's in the frozen section. So cheap, simple, and a great addition to any meal. I like to have them with a horseradish sauce that I make with mayo and horseradish. Just mix in the horseradish to taste. SO good!


.jalapenos.

This recipes was given to me by my friend Betsy and I was eager to try it because I desperately needed something to do with the extra jalapenos I had from the pizza recipe. Such a simple recipe! Just needed to cut the jalapenos in half, scrap out the seeds, fill with mexican cheese, then sprinkle on some Larwy's seasoning on top. I baked at 400 until the cheese melted. YUM!!!

A WORD TO THE WISE...I was told that jalapenos are worse on your eyes than onions...however they did not seem to bother me until I touched my face with my hands. The same hands I used to pick out the seeds. (apparently you should use a spoon or gloves, but Im clueless) My face started burning..then I put water on it and this just spread around the burn, I accidently touched my eyes...and long story short and 40 minutes of screaming sobs later, my husband pouring milk on my face, a hot painful shower, alcohol and a fan on my face actually helped. But for two days every time I touched my eyes they burned. Apparently jalapenos have the worst oil ever. I did not know, and now YOU know :)

.pizza pizza pizza.

Pizza is my all time favorite food EVER. However, I am so picky that I refused to make the typical pepperoni pizza because I did not want to be disappointed. This recipe was found at allrecipes.com and given to me by my friend Alisha. (Alisha will be mentioned several times, she is one of the best cooks that I know and shares all of her wonderful recipes with me) This recipe was easy, delicious and healthy. Enjoy!



Ingredients

  • 2 tablespoons butter, melted
  • 1 tablespoon olive oil
  • 3 tablespoons minced garlic
  • 2 tablespoons sun-dried tomato pesto
  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried oregano
  • 1 tablespoon grated Parmesan cheese
  • 1 unbaked pizza crust
  • 1 tomato, sliced
  • 1 bunch fresh spinach, torn
  • 1 sweet onion, sliced
  • 1 fresh jalapeno pepper, chopped
  • 1 (6 ounce) package feta cheese, crumbled

Directions

  1. Preheat oven according to pizza crust package directions.
  2. In a small bowl combine butter, olive oil, garlic, pesto, basil, oregano and Parmesan cheese. Spread mixture evenly on pizza crust.
  3. Arrange tomato, spinach, onion and jalapeno on pizza. Top with crumbled feta cheese.
  4. Bake according to pizza crust package directions.

Honey...what's for dinner?

I got married January 23,2010. We got back from our wonderful honeymoon on February 1, 2010. This is when I realized not only do I not cook but I really CAN'T cook. Or so I thought..So I decided to do what any good wifey would do and attempt the impossible. Cook..And surprise surprise I LOVE TO COOK! So now I will post the different creations that I have made. Most recipes are from friends and several recipes are fast and cheap creations from wonderful Trader Joe's. Hopefully I can share my experiences to other novel chefs in the making. Bon Appetite!
